Diabetic Recipe of the Week: Banana Bars
Who said you can’t enjoy your meals if you suffer from diabetes? The following diabetic recipe will teach you to cook delicious banana based dessert both healthy and sweet.
Oven heated to 350 – 375 degrees. Now do the following:
- Crush cereal ( 1/2 cup);
- Beat sugar ( 2/3 cup), low-fat sour cream ( 1/2 cup), margarine/ butter ( 2 Tbsp) and 2-egg whites in large bowl on low speed 1 minute;
- Beat in mashed very ripe bananas (3/4 cup) and vanilla (1 tsp) 30 seconds.
- Beat in flour (1 cup), baking soda (1/2 tsp) and salt (1/4 tsp) on medium speed 1 minute;
- Stir in cereal;
- Spread in a square pan (9 x 9 x 2 inches, with cooking spray);
- Bake 20 to 25 minutes;
- Sprinkle with powdered sugar.
