Onion Soup with Mushrooms

Soup, especiall vegetable soup, is a great option for a healthy diabetic lunch.


  • 3 cups thinly sliced white onion,
  • 1 cup thinly sliced chopped leeks,
  • 1 cup chopped shallots or green onions
  • 1 tbsp margarine
  • 1 tsp sugar or sugar substitute)
  • 2 cups your favourite mushrooms, fresh and sliced
  • 1 cup canned mushroom stock
  • salt and pepper to taste

Cook onions, leeks, and shallots in margarine in large saucepan, covered, over medium-low heat for 15 minutes. Add sugar, and continue cooking until onion mixture is golden. Then stir in mushrooms, in about 5 minutes add stock and heat to boiling. Make it simmer for 15 minutes. Add salt and pepper to taste

Each of 6 servings contains 85 calories, 15 g carbohydrates, 5.4 g sugar, 247,6 mg potassium, and 452,5 mg sodium.
