Onion Soup with Mushrooms
Soup, especiall vegetable soup, is a great option for a healthy diabetic lunch.
Ingredients:
- 3 cups thinly sliced white onion,
- 1 cup thinly sliced chopped leeks,
- 1 cup chopped shallots or green onions
- 1 tbsp margarine
- 1 tsp sugar or sugar substitute)
- 2 cups your favourite mushrooms, fresh and sliced
- 1 cup canned mushroom stock
- salt and pepper to taste
Cook onions, leeks, and shallots in margarine in large saucepan, covered, over medium-low heat for 15 minutes. Add sugar, and continue cooking until onion mixture is golden. Then stir in mushrooms, in about 5 minutes add stock and heat to boiling. Make it simmer for 15 minutes. Add salt and pepper to taste
